Svenja Ostwald Inspires Women with her Healthy Recipes

CHEERS to a healthy a lifestyle with amazing recipes for you to share with your family.

Here are some of my favorite recipes at the moment:

VEGAN PAD THAI
6 oz thin brown rice noodles
1 bundle spring onions chopped
2 whole carrots ribboned 
1 freshly squeezed lime for serving
1 handful cilantro
1 handful crushed peanuts


Cook the brown rice pasta according to the package.
Then make  the peanut dressing. Set aside. 
Wash and chop the carrots, spring onions and 
cilantro. 
Combine the cooked pasta, carrots and spring onions with the peanut dressing.
Serve with some crushed peanuts, cilantro and fresh lime juice.


PEANUT DRESSING
1/4 cup peanut butter (or almond butter)
2 tablespoons fresh lime juice
1 tablespoon coconut nectar
2 tablespoons coconut aminos
1 teaspoon sambal oelek (optional)
1 tablespoon water (if it turns out too thick)
1-2 garlic cloves minced


Add all dressing ingredients to your blender and blend until smooth.
Season with salt and pepper to taste. 


WATERMELON ARUGULA

serves 2 
2 cups  chopped watermelon
2 cups  arugula
1/2 cup sliced almonds
1/2 cup fresh mint chopped
1 ripe avocado

Lemon Dressing
1/4 cup   fresh lemon juice
1/4 cup   olive oil
1/2 teaspoon  mustard (without added sugar!!!)
Freshly ground  black pepper
1 teaspoon honey


1. To prepare the salad, be sure to wash the arugula and cilantro thoroughly. 
2. Toss the arugula with the chopped scallions, cilantro and capers. Cut the avocado and add to the salad.  
3. Combine all ingredients for the dressing and blend until smooth
4. Stir the salad well, add dressing and let the dressing marinate on the salad for 5 to 10 minutes.
5. Enjoy.

PEACHY SALAD
serves 2
2  peaches sliced

2 ripe tomatoes sliced

1 cucumber sliced

1 handful fresh basil

1/4 cup   fresh lemon juice / some lemon zest

1/4 cup   olive oil

Freshly ground  black pepper and some salt.

ENJOY.

STAY HYDRATED!!!

Add some fresh fruit, mint and ice cubes to your water.
